Install new version over installed one through standard Joomla! installation page. Upgrade process doesn't require to uninstall previous version of the extension.

This is not a bug, this is a feature. "ARI Data Table" widget uses DataTables jQuery plugin and filter functionality of this plugin works in way described here.
