Your PHP configuration is not compatible with Joomla! 3.x. Magic quotes should be disabled for Joomla! 3, you can read about here on official Joomla! site (see "Requirements for Joomla 3.x" section). "Magic Quotes GPC" parameter is enabled on your site so Joomla! works incorrectly. For example it saves " as \" (added additional \ symbol). It occurs not only with "ARI Docs Viewer" plugin code, it occurs with any content (for example in articles content) which contains " character.

Disable "Magic Quotes GPC" parameter and everything will work fine.

Out of interest, if I installed Joomla 2.5 would AriDocs work with it or would it still require a better php version?
