I'm pretty much a newbie, not a lot of programming knowledge, just relying a lot on modules, etc. Here's hoping that someone can help.

I installed ARI Ext Menu and got it working. It works fine on Google Chrome, but on Internet Explorer, the drop-down menus do not seem to be functioning.

Additionally, is there any way to make the horizontal bar stretch all the way across the screen? There is a small little gap at the right corner that leaves something to be desired.

This problem with <joomla_directory>/templates/beez_20/javascript/md_stylechanger.js file. It causes a javascript error, you can see it in browser's error console. Fix it or remove this file and the menu will work fine.
