Use {$SummaryByCategories} predefined variable in a text template.

Ok...however, it would be possible to get this information in independents variables?

One variable for each category. And specifically, I just want the total number of points reached for each category

The extension doesn't support this ability. It can be implemented as a custom development.

Template for {$SummaryByCategories} variable is located in <joomla_directory>\administrator\components\com_ariquiz\defines.php file.
