The plugin provides ability to define an email template in quiz settings. You can add a specific link to template to track clicks using Google Analytics.

I am trying to follow GA guidelines and I have not had success yet in implementing it... It is not that easy for a user like me.

In the meantime, I found a WP plugin (Email Tracker) which does what I asked you. However, it is too expensive ($99).

How about getting inspired by Email Trackers code and adding the functionally in your plugin?
